Abstract

This IDC Perspective features an interview with Joris Aarts, CFO of Netherlands-based goat cheese and goat dairy producer Amalthea. Joris shared his company's experiences in the complexities of AI-powered solutions for managing and improving milk yield in the cheese-making process. He revealed how Amalthea can save hundreds of thousands of euros a year by increasing the milk yield by just 1%.

"Many organizations, including food and dairy manufacturers, are still challenged by the deployment of AI-powered digital tools. Some may be missing internal AI-related capabilities and experience; others may be struggling with data availability or quality. Amalthea's successful journey leveraging AI for complex production processes may inspire companies that have not yet investigated AI's potential." — IDC Senior Research Director Jan Burian, Future of Operations, IDC Europe.
